Oh yes this is a better pack. The hot pack method. I opened one of the earlier jars to test the flavor which is excellent but they are way too soft. I processed them for 15 minutes in a boiling bath against my better judgment but that is what the recipe called for. This time I used my dill pickle method with Pickle Crisp and 180°F bath for 10 minutes.

Sous vide bath? Any tips? I've cracked way too many jars :face:

Buy better jars. When packing hot you need to take them right out of the Dishwasher too hot to handle or heat them to 140°F in the oven or fill with hot water after they have been sterilized. Fill one at a time if your house is cold. I think I have broke less than 5 in 50 years of home canning.

Never tried heating them up before. Makes sense :d5: Only use ball jars
