In addition to tripas and chitlins (southern pronunciation), there is Hog Maw. Old school stuff still popular with southern country folks. Also popular in PA with the dutch. Technically it's part of the stomach, but close enough! The pic is from the local "country" grocery store. Bonus pics of other parts!

I get cured hog jowl or smoked hog jowl here whenever I make carbonara as regular grocery stores don't carry guancaile
