I have one of those and it does not hold an edge well. I am too cheap to buy a really good one.
Yep, you do have to sharpen them on a regular basis…. And there’s different levels of quality to mercer knives. It’s a good entry level knife, that gets issued in many culinary schools. If you want an excellent knife that will hold an edge for a long time, you gotta spend.

Hubby has a knife obsession..:biggrin:... this is his newest...not high end... around 30 euros....but it was only when it got here i realised...he doesn't ruddy cook...the only domestic duties he does is chopping lettuce for the chickens..if I forget....:crying:....

This is my favorite knife…. It’s a hand forged chef’s knife… really great quality, not cheap, but it will last forever…
