Alright, got the marinade cleaned up, made a fresh batch, and marinated my pork for an hour.

Then I assembled it between a pineapple.

This goes in the oven for 3 hours at 250* to slow roast. The pineapple on the top should help keep it moist, but after about 2 hours, I'll need to get the basting brush out, too.

Dinner at 5:30!
