@Mossy In addition to what Frank said, the yellow fat means it was grass fed which is good! Maybe look for a Chuleton cut. It's basically a ribeye here in the states, but cut little differently. Lomo Alto is a T Bone. Always look for lots of marbling as well. Little veins of fat running through the meat. More fat= more flava!
