Oh no don't get me wrong I understand the hunt for the perfect pie. In my coffee and my pizza and well everything we value the new & different. My coffee blends are fleeting as I purchase 1 # sometimes 2 # of a variety and blend it with another similar random beans. Most of the blends have great depth and different subsets of flavors - it is new every day even every minute as the cup cools down. So I don't have a holy grail standard that I hold each blend to. Rather I seek the unexpected.
With Pizza, since we have the GF dough version mastered, like you the crust is just beyond cracker but not fat either. but for toppings the sky is the limit. This is a couple of recent pies and now I am jonzzen for a pie.
