You are correct on both accounts. A well balanced IPA will have first and foremost a clean malt base with good caramalt this is hopped in the boil pot and dry hopped in the keg, and if you are really lucky you get to drink some from a dedicated homebrewer that puts a refrigerator on a wave table to simulate a trip around the Horn in a ships hold. He indeed won Best of Show at the State Fair. This is when a Good IPA was about 50-60 IBU range. When you get too high IBUs you cannot taste anything else. A lot of the stuff that sells today is just retail swill IMPO.
I have to drink Gluten Free now so real IPA is just a fond memory. The Glutenburg IPA is quite decent with a nice balance that allows both hops and grains to be enjoyed.
@Suki that is why there are 11 other base styles in brewing. Lagers like a Pilsner or a Blonde Ale can be made with very subtle hops that you might find suite your flavor? Do you like Guiness?
