Mine stay pretty small until day 20, I wouldn't worry to much about it. I'm betting she explodes in the next 5 days with growth. I wouldn't trust that PH meter however. I bet it sits at 7 no matter what. Thats been my experience with them anyway.
It normally fluxuates I just havent been able to get it down as I'm really trying to not over water.
 
@Garage_Grower really helped me out when I switched to coco and how to water it. Some of his coco grows journals are pretty good to read and I chatted him up quite a bit about it. A lot of info out there says "you can't over water coco" but I don't think thats totally true. When they are young I've noticed they do droop a bit if over watered. That being said I do keep my coco moist at all times throughout the pot. The bottom 3/4's of the pot is going to stay moist well into the 2nd week of veg. So I water every other day to keep the top moist with 100-200mil of very lightly dosed water. You're not watering to run off so the salts will be building up in there, so keep the nutes low. At some point into the second week the bottom will start to dry out and that's when I give it the first water to get run off and get rid of some of those salts. I just keep repeating the process and around the 3rd week is when I start looking to water to run off every time. From what I understand is coco becomes hydrophobic if you let it dry out and messes up the PH, but I've never let it happen to test that theory out :)
 
One little thing I use for all my plants now are pot elevators, especially when using the fabric grow bags. It helps with air circulation underneath the plants, air-pruning the bottom roots, and keeps them out of any runoff you may have.

I got these pots all prepped last night, pre-soaked them and now just letting them warm up for a couple days before I drop some beans. I put them up on totes for the first week or two because it’s abit warmer up there (sitting at 85°f at the pots).
 
Just like @MesaBoogie said, I wouldn’t trust that PH meter at all, I’ve not had any cheap ones work for me. Just make sure your feed is around 5.7-5.9 for the majority of waterings, and you will be fine. Shoot for 10-15% runoff once the plant is large enough, and that will keep everything refreshed and in range!

How do you know if you have a large salt build up. Is there many side effects
 
Every time you feed you are adding salts. So you can be watering with the correct amount of nutrients but because you have not flushed any out it builds up in the medium and becomes too strong. You're plant is looking pretty happy in the last pic, what ever your feeding is just fine keep it up. Just keep the salt build up in mind as you go.

Ah yeah. I've barely fed it. Keen to get some nutrientz in it but these things take time Haha
