Might not see any amber yet, but your seeing more brown pistils which means shes getting closer to the end, and she does look thirsty but otherwise relatively good with your trip away. She does seem to be consuming her fan leafs quick now though, but part of that is probably because she dried out slightly.
Probably have a week to maybe Friday left, your in the home stretch now, as for looking for Ambers make sure to look at the older clusters aka brown pistil areas and not just the new growth as that and on the outside edges of the smaller leaves is where they show first, and just to mention some plants don't necessarily amber up the same way other plants do, just so you know.
I personally like to harvest when the plant says its done, you'll learn to spot it, with the whole full calyx's, stopping of growth, and aging of the plant, but that usually corresponds to cloudy trichromes with some clear and amber mixed in for me, but also comes down to personal preference.
