I got the chicken ground today and need to get it made into patties and Links tomorrow and get it in the freezer. I make it into skinless links by rolling it up in plastic wrap and freeze. Then you can unwrap it and poach it in some wine from frozen and it will keep its shape. I have used pork and sheep casings so you can grill it but it is a PITA to get the casings.
They speak Italian and Sardo (Sardinian) in Sardinia, I should come by this naturally
