The trick is to get your smashin' spatula nice and hot, that way the meat doesn't stick when you do the smash. And I use a separate super sharp spatula to do the press with, so I can scrap off any parts that do happen to stick ASAP adn they stick back to the patty.
Try dragging the spatula off the burger, instead of lifting straight up…..won’t stick that way. Just pull straight towards you.
