Just the idea of this makes me so hungry. I have indeed had some mighty fine brisket Texas Style. It is a lot of work but it is rewarding. Enjoy!

Have you ever done a Kalua Pig underground? A 3 day event if you count digging the hole and gathering enough rock and wood. I have done it twice. The first hole I dug by hand and it worked out well. The second time we had a back hoe and that was a much better pit .

Not yet but would love to try that. Seen on it the TV a few times. And I get to dig a hole, love digging a hole.
Had a job as a mud monkey once, got real good at looking in holes

13 and half hours in and about an hour away from wrapping the brisket.
Keeping the fire stoked and chucking the ball is my lot at the moment... man I'm so stoned and tired, I better be careful my oldest know this time to ask Dad shit and he just nods in agreement.
