Yesterday was 40mph wind gusts with constant 10-15mph but wife wanted grilled chicken. So had chicken thighs with Italian dressing, chamber vacuum sealed to marinate for a couple hours. Fired up the grill and cracked a few Guinness Nitro Cold Brews while I was grilling. Sides of corn and baked potatoes were done in the house.

We had a half pork loin waiting to be used. I mixed up a Sweet n Spicy dry rub. Then scored the loin and coated. Let sit for 2 hours before getting the smoker going. Fired up the smoker to 225f placed the loin and potatoes in to smoke for 3hrs. Wasn’t sure what other side to make but ended up with sautéed onions and green beans. Also had little chunk of venison I tossed in with everything in the smoker and not bad for first time doing it this way as I normally just grill venison to medium rare.

Making pastrami today and I forgot to take pictures of the briskets all rubbed down before I placed in the smoker. Maybe when I go back to check on things I’ll snap a smoker shot.
 
Ok here is the corned beef that you soak to pull out some of the salt content. Then cover in Pastrami seasoning before hitting the smoker. You can wrap and finish cooking in the smoker after it hits 165f till the final temp is 195-205f. But we pull out at the 165f then vacuum seal to finish cooking overnight in the sous vide. Chill and slice on our meat slicer. I have rolls and sauerkraut to make Rubens later.

Decided it was nice weather yesterday in the 70’s so fired up the grill for steaks. Now Mother Nature flipped her lid today and dropped temps back into 40’s. I still have baby back ribs and chicken wings to cook us for other dinner meals.

Damn today was cold from the 70 degree weather to bone chilling wind and rain in the low 40’s. But I had wings to cook. So fired up the smoker again with 8lbs of wings at 225f for 3hrs and about halfway through I decided to try smoking an onion. Once everything came off the smoker had the fryer heated up to crisp up the skin. Whipped up a batch of garlic parmesan butter sauce to shake up the wings in and dinner was served.

I wanted ribs and happened to pick up couple baby backs. I did a sweet rub on these. Then finished with some sweet baby rays. Made a cucumber, onion and tomato salad marinated with Greek dressing, beans and corn for sides. Not sure if I’d go this sweet again as it was like eating candy pork.
