I gotta tellya Doc I faced my mortality head on. When they called the ambulance my butt puckered for sure. The ER was a fucking 3rd world nightmare. It gave me PTSD seeing all of the pain and misery of so many sick people lined up in the hallways just like you see in the news in a third world country. I start crying when I talk about it. I am a different person today.

Yeah I have a heart problem but no intervention needed at this time.
I have so much respect for the people that can work in that environment.:worship: Enough of that shit.

Son turned 18 and asked for Carne Asada so marinated the steak overnight and then I grilled it up. Wife made some Spanish rice and refried beans. Plus had to have some bacon wrapped jalapeños.

Had smoked chicken legs one night for dinner and then since we had couple pork shoulders tossed them on so we have extra pulled pork vacuum sealed in the freezer for quick meals.

The Pizza last night was awesome! The Gluten Free crust needs a little lower temp ~ 700° as it burns around the edges pretty fast. The funny thing is it tastes pretty good and everyone ate all of the crispy burnt edges :rofl:

I was wanting hot wings and the rest of family wanted chicken tenders. So on my own for dinner. Had 4lbs frozen wings dusted with some rub placed on smoker at 225f to defrost and partially cook. Then into the fryer for that crispy skin, shake in some buffalo sauce and ready to serve.

3 hours on the smoker at 225f, then vacuum sealed to run at 145f overnight, then finished on the grill sauced up along with grilled zucchini and coleslaw.

Had 2 whole chickens in the fridge so they got spatchcocked seasoned and tossed on the smoker 250f for 3 1/2hrs and 1/2hr at 350 to crisp up the skin. Wife made baked potato, sweet potato mash, stuffing and some leftover coleslaw.
