Well I’m on complete dinner duties while the wife is sick. I made this pan of Shepherd Pie ( seasoned ground beef, layered with cream corn and sweet peas and then topped off with mashed potatoes. Then baked at 350f for an hour since I premade it last night and pulled from fridge. To get the top crispier under the broiler till it looked good.

Now you seen the smoked chicken I made couple days back. Today with the leftovers pulled and diced the smoked chicken. Took the bones, skin to pan roast, then boiled with some onions and seasonings for 1 1/2hrs for quick bone broth. Then found 2 cups chicken stock wife previously made and froze. Got that all drained and added back to the pot, more carrots n onions along with couple cans cream of chicken. When just about done put in 1 cup rice to boil 15 minutes then shut off till the family is ready to eat. Not bad if I say so myself with this Creamy Smoked Chicken with rice soup.

Had me thinking chicken pot pie with the 1st half of this post :dancer:
 
Had dinner at a friend's house tonight. They are very gracious hosts and cater to my extensive dietary needs. This was the desert, poached apple with a caramel sauce and soft goat cheese. The salad was baby greens with a citrus dressing and the main course was Pho.

Yesterday was 40mph wind gusts with constant 10-15mph but wife wanted grilled chicken. So had chicken thighs with Italian dressing, chamber vacuum sealed to marinate for a couple hours. Fired up the grill and cracked a few Guinness Nitro Cold Brews while I was grilling. Sides of corn and baked potatoes were done in the house.
