Just a update I had to make another batch of honey, this time I only tried to infuse 2 cups ( starting with 2 1/2 cups)instead of 4 also after MB machine ran it’s cycle I reset the cycle to heat to 190 degrees once the mixer came on I assumed it came to temp unplugged the machine. Trying to filter 130 degree honey vs. 190 degree honey is night and day, so much easier and nowhere near as messy. I used a 190 micron filter and the extra heat didn’t seem affect the honey at all. One note I didn’t get as much of the “scum” on top the wife claims it’s potent.I still wasn't feeling right until 10:00am this morning. Serious over dosing. I won't make that mistake on a weekday again.
Honey is now tan in color. Filled up two 8 ounce Ball jars. Top of each looks like it has a foamy layer. It should work well with coffee and tea. Has a kind of toffee candy flavor to it.
I think that scum comes from the bubbles that result from the spinning of the blades causing bubbles in the honey that then slowly float to the top after days. With the hotter honey the bubbles probably are less likely to form or float up quicker and pop until the honey cools more.
