One of these days you should try a reverse sear. Basically, put a well seasoned thick steak in a 250 f smoker until you reach an internal temperature of 115-120 f…..take it out, let fully rest, 20 minutes or so….then dry it off and sear both sides in a ripping hot pan….slice and serve immediately (no need to rest a second time).
