Thanks for the link! Those look very interesting. Much more affordable than the machines. I have an insta pot that was a Christmas gift, but never used it. Didn't know it till tonight, but it has a sous vide feature on it. Am gonna give that a try, but it supposedly has some temp variations. So, now looking for a back up plan if that turns out crappy.

Our days are still Hot....topping 30C most days...but the nights are getting colder... down to 14 C lately.....time to start Half shut the windows on a night time.....

Is sous vide that good? The idea just seems strange to me. Everyone at my job has one of these things and they bring them in all the time.
We mostly use it for meats and heating up stuff from the freezer but you can also use it to infuse but they're pretty cool and relatively cheap for a kitchen gadget. Plus you get to use a torch!

Pretty much. You can throw a pork chop in a ziplock, set the temp and dinner is ready whenever you want it. Usually takes about an hour to cook, but you can leave it for hours without overcooking anything
