How many people work in that kitchen? 644 is nuts! Just got home from a steady but mostly chill night at the restaurant I work at. Im at a small place in Central IL so 100 for our kitchen is pretty busy.

6-7 mostly steaks and prime rib, couple of fish dishes and upper middle of the road southern foo. so, you can crank out that many. Pretty well rounded menu though. One person pulling steaks and running a flat grill and oven, char grill, salad person, fry, and 2 expo behind the line. Also have 2-3 people in back restocking/prep and rotating giving breaks

It’s my stepson and his wife. My wife will have me sleeping in the dog house. They’re building a new house and will be here a month or so. They’re cool thank goodness.
