I had time to marinate the chicken for the salad tonight and I stir fried it instead of breading and frying, gluten free soy sauce, ginger, garlic, Mirin, rice vinegar and green onion. I used my regular dressing recipe for the salad but bought two new vinegar brands. I should have used some baking soda on the chicken before I marinated it, it got pretty dry in the stir-fry.
The fresh water chestnuts were amazing, I wish they were available year around.
We buy the gluten free pot stickers at Whole Foods. I searched high and low in the Asian market today but could find no dumplings of any kind gluten free. I even asked a couple of the clerks but they just looked at me in total confusion as if I was speaking English or something.
