But I do have a question about this process,does the bucket need to have a tight fitting top or does it need to breath constantly?

Depends how full it is! If there is plenty of head space then it will be fine sealed! If container is full u need to make it breathable! Or open every day or 2 to release the pressure!
If u ferment roots too i am sure u know already but do them separately from the leaves!
