I haven't got a smoker..so it has to be the oven...
You do have a smoker..you just don't know it...

I use a weber kettle grill to smoke everything on. I've had a bunch of different smokers...and this works just as good as any of them. You just have to get good at setting it up correctly for indirect heat, smoking. I use briquettes (I've tried a bunch of stuff...they produce the most predictable heat) and either wood chips or wood pellets (like for a pellet smoker...check amazon) for smoke production. If you google "weber snake method" that will be a good place to start your learning process. If you set it up right...you can cook for 6+ hours without having to open the lid...just control the heat with the dampers.

What about the method for extra extra crisp and fluffy chips/french fries....?.......:eyebrows:

Dos anybody actually make their own chips now...?...:biggrin:..or am I old fashioned.....

Nope, me wife does if about twice a month. She got a air fryer for mothers day and been using it on everything since!

I only make my own... handcut, and fried on the stove top. (don't ask my method....you may think I'm crazy....but it works)

I tried cold smoking in the weber..hubbys verdict was...mmm...I don't like the taste of the herbs......:doh:

Must admit...I was Impressed with the air fryers..better than I expected.....:headbang:

Ours broke....:pass:..now I microwave jacket potatoes..without pricking the skins..so the steam makes it easy to slip off..

Cut into chips..Then shallow fry............makes them soooo Crissssssssssssssspy.....:d5:
