Lol...more like questionable cooking techniques...lol
Here it is...cut your chips...fill a large pot with 1.5-2 L of oil (we like peanut..) After rinsing or soaking your chips, dry them and place them in COLD oil. Put the burner on high and don't touch for about 17 minutes (less if you're doing a small batch)...after that move them around a bit until they are finished (golden brown..)
Here is why it works...during the cold period the potatoes are kind of "blanching"...getting soft....and when the oil heats up it gives a great crispiness to the outside....alot like double fried chips. Salt liberally and add a bit of chopped parsley. voila!
