I do it all by feel but, the method outlined previously is the state of the art, be sure, method. If your herb is cured at the right humidity, it can ferment slightly over the long term, if you do not burp the jar occasionally... at least, that's what happened to me. It's not a huge deal if it ferments a little. I just let mine air out for about 24 hrs and it was okay again.
