We would like to get as close to 62% as possible but given that most of the meters are + or- 2% or 3% I think you safe.

Not sure about these grove bags. My mini humidity reader was 50% when I put them in the grovebags after 2 hours. I realised I'd overdried the bud. I do have a wood moisture reader for work, that read 17% when I stuck the pins into the stem of a bigger bud.
So that confused me for a start.
I then tried on few different occasions to rehydrate the bud with orange peel and the humidity went upto to 64% . After leaving it in for an hour and then removing, the humidity quickly dropped back down to 53% . Im confused to be honest. Probably just order up some boveda packs and put them in jars and burp once back upto 58/62% range.

An hour attempt at rehydrating will not do much at all, hours and days is what you need. Just like when drying, it doesn't happen quickly.
