Ok here we go again. We made up some homemade pastrami. Took 30lbs of beef sliced into more manageable pieces that were brined for 14 days. Then rinsed/dried overnight before putting on the pastrami spice rub. Heated up smoker to 200f dropped in some chunks of cherry wood. Placed all on the rack to smoke for 4hrs with internal temp of 150f. Now off the smoker cooled and vacuum sealed again to finish in the sous vide for the next 48hrs at 150f. Then it will be ready to slice up for some great sandwiches.

Since we had the smoker already going we decided to do a ham. So put the spiral cut ham in the sous vide to warm through for the 5hrs. Then tossed few more chunks of cherry wood in the smoker. Ran heat up to 250f with the ham in there for 1hr. Fired up the griddle to saute onions and green beans just before everything was ready. Dinner served. Now leftover ham might be doing some eggs benedict and kid asked for some split pea soup.

@bushmasterar15 funny you should mention Eggs Benedict. I love them and was planning to have them this morning but my blood sugar was too high from what I ate the night before. maybe in the morning.

Ms. MOG makes real hollandaise sauce in the blender. The recipe is from Fanny Farmer. It is amazing when the acid balance is just right. I like lemon the best but the Blood Orange version is a close second.

Just over 1lb of steak..5.04 euros.....on offer...... :biggrin: ...3 jacket tatties...1 sweet white onion....dash of cream to deglaze the pan........:chef:

1 lb steak...cut in half........gives 8oz steak each....crispy chips...creamy onion sauce.... less than 3.50 euros per person.............

For the days McD's seems Expensive............:crying:
