I made some rYBz for my Birthday on the black bomber. I used some new charcoal that I got, Jealous Devil Lump. Yup, it’s fucking top notch wowza.

So I made some coffee rub rYbZ baby back, Yukon mashed and for my cake, I went a bit bonkers and got a Winter Piecaken from Goldbelly. It was a bit steep, but it was beautiful and amazing. It was on sale. I paid like $80 and it came overnight in a chest with dry ice.

So the Winter version is Red Velvet, Eggnog Cheesecake, and Chocolate pecan pie, with amaretto butter cream frosting and a cherry pie filling on top. It looked identical to the picture and can easily serve 14 or so people. They really do an amazing job….and I’ll remember it for the rest of my days.

Memories: Better than empty spaces. Worth it? Hell yeah it was

This was a London broil, thick cut that was done in the sous vide, and finished on the grill, turned out like a brisket. Had a bacon pasta salad for side.

Cinco de mayo breakfast burritos

Home made chorizo spices, chili powder a mix of sweet and hot, Mexican Oregano, Garlic powder, cumin, salt, wet with red wine vinegar then mix into the ground meat (whatever kind you have) thoroughly. Use a lot of spice and vinegar, add some oil or bacon fat to the pan and cook down until it fries a little to bloom the chili then add some water and cook to a thick consistency. I make better refried beans than any canned beans but canned is very convenient. I find Bush's traditional Refried beans to be acceptable just add a little bacon fat. Shredded cheddar cheese in a flour tortilla.

Yesterday was my wife’s birthday and she wanted steak. So pulled things together and got T-bone steaks. Whipped up some spinach artichoke dip and venison that went in the smoker. Took broccoli crowns that got roasted up on the griddle. Then fired the grill up hot 4 minutes per flip on the steaks for a medium rare/medium finish. All in all the birthday went well without a birthday cake since wife’s back on the low carb diet.
