Why is higher water content (such as vs. ≤58%) better with rosin?

I get a measurable better extraction. I have a thread about rosin in my signature.

Do you do anything to remove the water content? Or with presses generally being heated, is the water just all vaporized?

That is a good question. I don't know where the water goes but I don't think much is in the rosin? I suppose there must be some?
