That's a great idea, but the problem with pots is that poppy roots like lateral growth (one of many reasons it's hard to grow inside in conventional setups), so a wider than deep container is best but I have yet to find a good STURDY tray of the right dimensions that would work for a few large poppy plants... You could use the giant pots but the whole volume of it would most likely not be used efficiently and it would be a lot of extra weight to lug around. (hard for me with chronic knee nerve pain) All this is not to mention that while poppies do not like being transplanted while growing, they handle it quite well when established so if you were so inclined, you could dig them up witha shovel carefully and throw them in a tub and bring em in for the few days it takes to harvest... you can also prolong the life of the plants by bringing them in and putting them under 16/8 under a FLOWERING bulb... I have heard stories of people keeping an annual variety alive for years inside...

Even if I could bring them indoors, that looks bad to a cop for sure and I'm expecting at least one visit to check on my outdoor marijuana crop to make sure I'm following the law. If I just have a patch of unharvested flowers they probably won't think twice, if they do, the amount is so small I doubt there would be any real trouble...
