Harvest & Curing long-term storage/curing

Hi guys. I'm in a bit of a pickle here.
I need to leave 2-3 days after harvest, and wont be back for 5 weeks. What do I do in terms of drying, curing and storage? I've heard putting them in the freezer could work. Any other ideas?
