Chocolate Covered Cannabis Cherries

Time Required: 2 Hours 15 minutes

Yields 24 Chocolate Cannabis Cherries

What You Need:

  • microwave safe bowl
  • 1 cup dark chocolate chips
  • 1 cup milk chocolate chips
  • ¼ cup Cannabis Coconut Oil
  • 24 cherries w/ stems (washed and dried; if you use fresh cherries remember the pit!)
  • wax paper lined plate
Steps:

  1. Heat milk chocolate chips, dark chocolate chips, and Cannabis Coconut Oil in a microwave safe bowl. Remove and stir every 20 seconds until melted. Chocolate should be warm but not hot.
  2. Dip dry cherries by the stems in chocolate one at a time allowing excess chocolate to drip back into bowl.
  3. Sit cherries on a wax paper lined plate to dry. Repeat until all cherries are coated. Save extra chocolate on the side (you will dip the cherries again.)
  4. Chill cherries in the refrigerator for 1 hour.
  5. Warm the chocolate sauce back up and remove cherries from the refrigerator.
  6. Dip each cherry in the chocolate sauce for a second time. Return cherries to the refrigerator to chill for 1 hour before serving.
  7. Store extra cherries in the refrigerator.

Flourless Chocolate Cannabis Cake

Time Required: 45 minutes

Yields 10 Slices

What You Need:

  • round 10-inch cake pan, greased
  • saucepan
  • beater, or hand-mixer
  • ½ cup water, distilled
  • ¼ teaspoon salt
  • ¾ cup granulated sugar
  • 2 cups bittersweet chocolate chips
  • 1 cup CannaButter, cubed and softened
  • 6 eggs
  • 1 teaspoon vanilla extract
  • ⅛ cup powdered sugar
  • fresh fruit for garnish
Steps:

  1. Preheat oven to 300 degrees.
  2. Combine the water, salt and sugar in the saucepan. Heat over medium heat. Stir until sugar is dissolved. Remove saucepan from heat.
  3. Melt the chocolate chips slowly in a separate bowl in the microwave.
  4. Add the CannaButter to the melted chocolate and beat (mix) well.
  5. Add the hot sugar water. Beat well.
  6. Add eggs one at a time. Beat well after every addition.
  7. Stir in vanilla extract.
  8. Pour the batter into the greased cake pan.
  9. Bake in preheated oven for 30 minutes, or until top of cake has formed a crust.
  10. Remove cake from oven and let cool in pan for 5 minutes. Dump cake onto wire rack to finish cooling.
  11. Dust cake with powdered sugar. Slice and garnish with fresh fruit.
  12. Store leftover cake in an airtight container in the refrigerator.

Cannabis Caramels

Time Required: 25 minutes

Yields 3 to 4 Dozen Pieces

What You Need:

  • 9” x 13” pan
  • Medium sized saucepan
  • 1 cup CannaButter
  • 2 ¼ cups brown sugar
  • Dash salt
  • 1 cup light corn syrup
  • 14 ounces sweetened condensed milk (canned)
  • 1 teaspoon vanilla extract
Steps:

  1. Melt Cannabutter slowly in saucepan.
  2. Stir in brown sugar and salt until combined.
  3. Stir in light corn syrup
  4. Add milk slowly while constantly stirring.
  5. Cook mixture over medium heat until candy begins to get firmer. (Usually 12 to 15 minutes.)
  6. Remove saucepan from heat and stir in the vanilla extract.
  7. Pour mixture into pan. Allow for candy to cool down.
  8. Cut, serve, and store.

Cannabis Pastry Bites

Time Required: 40 minutes

Yields 20 Pastry Bites

What You Need:

  • baking sheet
  • parchment paper
  • 2 sheets of puff pastry dough
  • ½ cup fruit filling of your choice
  • ½ cup CannaHoney
  • ¼ cup CannaButter , melted
Steps:

  1. Preheat oven to 350 degrees. Line baking sheet with parchment paper.
  2. Unfold 1 sheet of puff pastry and place on baking sheet.
  3. Use a knife to lightly outline 2 equal-sized rectangles (4 rows of 5) on the dough.
  4. Place 1 teaspoon of filling and 1 teaspoon Cannahoney in the middle of each rectangle.
  5. Unfold second pastry sheet and place on top the fruit and Cannahoney. Pinch the top and bottom sheets of dough together to seal mixture inside.
  6. Cut the layered dough into 20 pieces (remembering the rectangles from earlier.) Do your best to seal each individual bite by pinching the dough
  7. Brush top of dough with melted butter. Place baking sheet in oven and cook for 30 minutes.
  8. Wait for pastry to cool before serving.
