Making cookies!!!!! Going crazy with the Christmas cookies. Pics to follow.


Here we have some 3 day acid bath super trimmed on the bone skinless chicken thighs on the Weber with a sweet and spicy mustard and coffee sauce.....and some gorgeous 16oz Del's with a Merlot Demi glaise and sauteed mushroom medley that we did with some sharp cheddar mashed Yukons through the food Mill and a purple asparagus and sugar snap pea grilled duet with a fellow AFN member last week. Edit:. We did Sour cream and chive baked Russets with the ribeyes.....not food Mill Yukons. That was a couple days later.....lol

Damn.....thats a whole gingerbread village right there. NY Strips on the grill...classic...I don't care if it's 12° out, if I got steak for dinner, it's going on the grill. When it's any colder than that, I put the Carhart bibs on and fire up the charcoal Weber just to get an awesome sear fighting the cold. People look at us like we're nuts....I return the looks, because it's just a little cold out. I'm not gonna melt. My grill works great in the cold....lots of oxygen for a hot fire if I need it. Yeah, I'm not hanging outside smoking some pork shoulder in January (usually) but I will definitely sear some tasty beef slabs without thinking twice. Enjoy the beef bro.

Cookies round one

Top left is Ina Garten's Coconut Macaroons recipe. She is also known as The Barefoot Contessa from Food Network fame. These are amazing and only have like 5 ingredients.

Bottom left is Chewy Almond Cookies using almond paste. Along with the Macaroons, they are flourless cookies. Kinda blurs the line between cookies and candy. Very classic Christmas flavor here.

Right side is Cherry Walnut Oatmeal Cookies. A modern spin on an age old classic with dried tart cherries and a hint of cinammon. These are slammin and are the most traditional of the three, cookie wise. Eggs, flour, soda and baking powder. Tomorrow is the official Christmas dinner because today was just too hectic. Also gonna make some Rugala with my frozen butter pie crust recipe tomorrow. Will make sure to get some pics of that mess. Y'all are gonna wanna stop by for leftovers....I'm in NY and the price is a packed pipe of something denk if ya feeling frisky. Till tomorrow. Merry Christmas all. [emoji849]

I made skrimps. Panko breaded 21-25 Gulf Pink Shrimp with clear your sinuses hot cocktail sauce. I get 2# bags at Price-Rite for $10 raw and uncleaned. If you love fresh fried shrimp, give it a go. 3 stage setup: dry, wet, dry. Season shrimp with old Bay and sea salt. Dredge through flour seasoned with paprika. From there into egg wash that has been whisked to make it really sticky. And then through Panko bread crumbs. Keep making more as you want them to sit for a bit. Make sure they have been sitting for 8-10mins and then into some hot oil for about 4-5mins. Seriously....try this if you want the best fried shrimp you have ever had. 9 stars guys. Peaces.
