Sugar or simple carbs will cause a short term spike that may leave you hungry it is the complex carbs Potatoes, Breads, Pastas, Rice Etc. that are your diabetes enemy. Been in that battle 20+ years now. I am winning. I have lost 80# and my A1c was 5.7. It has taken 10 years to lose the weight.
Side observation, the GF flours seem to have a better glycemic load than regular wheat flours?
I know, it's almost impossible to not get it everywhere. Especially when removing it from the parchment. But it's true, I'm OCD about my jars. I try an keep the rim and seals as clean as possible. Did you see this photo?
