That sounds bangin My 1st thought for the leftover meat was burger topping

You could also punch up the leftover liquid with some tomato soup….. and have birria grilled cheese and tomato soup….. hit the soup with cilantro instead of parsley….

I threw the onions and garlic in the blender with a can of chipotles in adobo. So that's why it looks more like a sauce

Leftover idea: on sour dough, layer smoked Gouda slices, birria meat, grilled onions and peppers, more Gouda….toast on your flat top like a grilled cheese….. use birria liquid and dip like a french dip….…. Boom!
