Cobbeled together a taco casserole when 1st wife forgot to get lasagna fixings......had hamburger and that was it....scrounged around, found a jar of salsa, a bunch of those taco bell packets, refried beans and 2 bags of dorito's....... kids freaking loved it and it became a staple when it was just me and them.

Mexican is just sounding good lately! Tonight having chicken enchiladas but instead of rolling them up it’s made in layers like a casserole! Get way more servings out of a pan waaaaay easier to prepare!
