I am up anywhere from 3-4 am, falling asleep at 9pm gives me 6-7 hours of sleep........
Though I admit the coffee drinking is a bit excessive, LOL
My coffee history:
12 years old, first cup opening trout day out on the lake trolling in a 12 foot aluminum boat with my dad in a fucking white out blizzard. The motor was just barely an even match for the wind, it snowed 15 or more inches in the boat before we could find the dock to get out. Caught limits of big fish though. A thermos of hot coffee saved my life. It tasted like shit but I loved every sip.
12 - 28 years old a cup or two of Folgers in the morning.
28 - 30 years old working sales and drank up to 2 pots a day working 16 hour days. Still Folgers or Maxwell House, Develop a sensitivity to caffeine.
32 - 50 years old cannot drink at all as it would set off my tachycardia.
50 something I get a catheter ablation to fix the tachycardia. Still afraid to drink coffee even thought the doc said it would be ok.
60 something Read on internet how to roast coffee in a popcorn popper and give it a whirl. I had no idea that real fresh roasted coffee could taste that good!
Then until now, I have become a real coffee snob. Wine has around 200 recognized flavor compounds, while coffee has nearly 500. It is new every roast and changes in the cup by the minute. My morning espresso is a love affair. I still have the caffeine sensitivity so one double shot a day is it.
Talking about pizza, I don't like pineapple on pizza but an olive oil, Gorgonzola, Pear and fresh green garlic with a drizzle of Balsamic reduction is a mighty fine pizza.
