I'm thinking it would be nice to get one of these Blackstone 28" pro series griddles. I also like the 36" griddle but the cost difference isn't worth it just
for a little extra space.

For smoking meats I just have a UDS (Ugly Drum Smoker) that I built years ago. It works for what I do but there is always room for improvement.
This Pitboss 1100 Pro pellet grill would be nice to get as I'm up north where it's cooler so the extra BTU's that this puts out would be a better
option then the Pitboss Austin XL which is half the BTU's for the same size setup.

Blackstone Pro Series 36" Griddle that my son put together. Then heated up to start seasoning cooking surface to prep for dinner. You all know me doing it big. Family wanted fajitas so onto the maiden voyage for the griddle.

Last nights grilling experience of marinated bone in chicken thighs, roasted corn on the cob and spaghetti squash. Then just before roasted up some poblano and jalapeños for some salsa.

Thought I'd get away making this steak dinner for my wife's birthday early but nope I'll have to make a Mongolian stir fry today for the actual birthday dinner.
