I ended up having leftover ribs again the other night. Still have one more rack to cook so maybe I'll leave this one with dry rub only.

The more I look at those Bushy RyBZ the more I think Sweet n Hot (My FAVORITE btw) jerky. It just has the right color and those little crushed red pepper flakes. They have an Inquisitive look. I wanna take a big old bite to see if I'm right.

That rub has like everything tossed in it. To bad I don't know where to get more as the label only says The Good Shit with some cowboy pic on it.
 
Friday chicken wings, curly fries and gorgeous fresh salad. The salad was a hybrid salad of an iceberg wedge and a bag of salad mix, plus red onion slivers, shedded cheddar, garlic croutons, real crispy bacon bits, Marie's Bleu Cheese w/ zesty Italian. Did the wings and fries in the Dutch Oven/Induction Burner rig. Just gravy...I pounded that monster salad like a rabbit.

I have the other slab of St. Louis ribs out sucking up the dry rub of some lemon pepper this time and The Shit meat rub. Will give it a few hours before I fire up the grill.
 
Quite the selection of ribs this week. How have you been cooking all these slabbers?

On a side note, I fucked up last night and gave myself a little smidge of salmonella. D'oh. So dumb. I am always ultra careful, I even use two sets of tongs, short for dirty and long for clean. On the gas grill I start with dirty on the left table and finished on the right table. Some solid practices that have kept me out of the bathroom or ER on the longest of Saturday night drinking and wing festivals that have gone till the sun comes up. None of that though....it gets ya when you're least expecting it.

So while we were getting all the wing stuff going, I was working on my Cinco de Mayo marinade last night. A gorgeous paste made of chilli powder, chipotle peppers, 3 limes worth of zest and juice, fresh garlic, olive oil, and cilantro. All shoved into my mint green KitchenAid Processor for a nice mix up, with a little Corona thrown in for the right viscosity. I'm making flank steak fajitas!!! So....we got the dirty side of the kitchen sink cleaned out and acting as ground zero for wings, sitting on a wire rack. Works great. Just make sure to bleach everything after. So I am making my slurry in the mixer and I dripped some off the lid when it was done...and I just ran a finger in it and licked it up without thinking. Then I realized. It snuck up at about 6:00am. Not too bad at all, but I got a little taste. Ohh yeah, gotta love that tasty chicken juice.

I've been just doing them on the gas grill for now till I can get some charcoal for the UDS again.
