Side note. I've been making cookies, brownies, etc.. for years. Basically cannabutter or oil. I always have a good product. I've never decarboxylated.
What's the deal with it? Do you only decarb fresh bud?

You are decarbing twice already. The first time when you make your oil/butter and then when you cook your baked goods. You are decarbing as you process and cook.
 
So I broke down! Clipped a sampler from Bridget... little quick dry and omg! Nice smooth toke, kind of a spiced fruity cheese flavor, very fruity aroma when I broke the bud down. Kind of got a nice calming cerebral high with a little relaxation. Definitely gonna be a night time toke after a good cure.
