Please tell me it's not a seed forming...

Thats what i did when i got a hermie. Removed all the sacks as quick as possible and hoped for the best. Still get you some nice buds even though. Might be a little airy. Where your plants stressed at all throughout the grow? Like did you run into problems a lot? Thats what turned mine. Still good though.

Can't find any pollen sacks! Plenty of seeds though!

One of the plants somehow managed to top itself (well I didn't notice doing it at least), but apart from that no real stresses that I can think of. But as a total beginner I'm not sure!

Any chance of picking up a dose of pollen from someone's out door grow? a slight breeze could have coated you without you even noticing.

I would say it's unlikely. My plants are in a tent, indoors - I'd be very surprised if there is anyone growing outdoors around here.

If you found no pollen sacks then an outside source is the only alternative. Around my neck of the woods there are so many outdoor grows it isn't funny and it doesn't take long for pollen to travel miles upon the wind!
It doesn't have to even be an illegal grow but a legal hemp/cbd farm 20 miles away.

The fact you only have a couple of seeds forming indicates to me that the amount of pollen that pollinated your girls was rather small, A hermied plant in a tent with fans blowing the pollen around would be full of seeds. A couple of seeds shouldn't affect the plant too bad, and it wouldn't hurt to remove them imho.

It’s a perfectly valid point, but I think it’s more likely that I am simply not seeing the sacks, rather than them not being there!

I have had a good look for pollen sacks, but can't see any. I have now checked the other plant (sown at the same time), and found seeds forming on that too (but again, can't see any pollen sacks).

Should I be getting in there and removing the seeds that are forming?

Chances are the nanna's are in the centre of the cola as it forming. I recently had a cultivar that did this. Not a single pollen sacks to be seen but the bitch pollinated all plants in my RnD. Crack a nug and a pollen sack would fall out.

You could pick thd seeds out but I think that may do more damage than good.
If you want to get to harvest, check every day for pollen sacks and remove them.
Like I said before there is nothing wrong with seeded bud. Just as potent as if it wasn't seeded. You only loose out on plant mass when they get seeded. They still produce plenty of tricombs.

Or you could just cut your losses and put that bitch down
