Looks good.. sounds like you have a good location.

I also used typical fiberglass wall insulation, still have a few spots to finish up to be honest.. like redoing the ceiling on mine. You can see some of what I did here: https://www.autoflower.org/threads/growage-life-with-gc.67662/

Havent updated my thread in awhile, I have a new run starting and i'll post up.
 
I don't know what is available in local market. I face extreme heat in summer and heavy cold at winter.
For the walls I would put a layer of rockwool and add a thin inner wall. For the humidity, I would paint externally with waterproof paint, this would last around five years.
For the roof I would place tar based roof tiles or if it is already covered, I would add a layer of tar enriched paper sheets under this and a fake ceiling layer inside. For humidity I would paint a transparent waterproof liquid layer if your climate is not hot or a white one if it is hot.
The inner walls you can paint with aluminium roof paint which is highly reflective.
The floor needs transparent liquid applied. This will insulate from humidity and also fill any cracks and add structural support in a cement floor.
Unfortunately I don't know your local market to suggest particular products. However these are relatively cheap in diy stores.
