Big 60 today guys . I have taken a week off work :cooldance: Going to have a BBQ with the family tonight - Steaks -Crabs - Prawns - The older boy went crabbing and got these and we cooked them last night , I have just finished getting the meat out of them . Prawns I got a box from a mate that has a prawn trawler . What more could a bloke ask for . The rest of the world might be going to shit , -- But not where I live . :cheers::smoking::vibe: :thumbsup:

Fresh out of the smoke house . Australian style bacon , Pumped and brined , Bacon like this retails up to $40 a kg . If you can find it . I started at 6.30 am and was done by 11.30 am . This is not a chore for me I love doing it . First batch in the new smoke house , I can play around now with flavours :thumbsup:

A nice basic rub, pecan + applewood chip blend,...man do those two pair up nicely! .... a splash of those pan juices makes the gravy even better as well :eyebrows:

@hecno The Australian/English (they called it both names) is one of the most memorable part of our visit down under. I am salivating looking at your rendition of it. All it needs is a fried tomato and me eating it.

This species is so tough it's ridiculous, drop it from an airplane and it'd grow where it landed :amazon:... best you can do is try to read the rhizome weave and branching, then make your best cut at a clean division! I do try to lift and "fluff" up the outer roots some beforehand.....
I saw through part of the root mass, then at the top to sever the rhizome, then rip it apart... I lost a nice cane due to force I had to use and loss of fine control- :rofl: :doh:... but it came apart well enough! I left the other monster whole just for the flower explosion to come late Winter, but did put it into a larger pot....

Thanks on the boid, MoG :toke:.. It's been a permanent combo (with oven boid) since dad picked up this smoker many years ago! ....... *(Hec, "boid" is bird spoken with a NY city accent) :rofl:
