I'd advise you not to manually remove the seed-shell in the future, just keep the environment moist and the plant will retain the sheel for as long as it needs to. It's the plant's only nutrient store at the beginning so shouldn't be removed. An easy way to keep the environment moist is just to mist all around her with tap water, preferably prefiltered through a cheap shower chlorine-filter.
Your organic soil may be too hot, you shouldn't have to worry about soil pH since it's an organic mix. The plants look a little small for eleven days so it would be good to find out why early on, i think it may be too much N as said above..
