Alright...without further ado....here it is...

Franks Wings and Fries

Buttermilk Ranch:
1/3 cup Hellmans mayo
1/3 cup sour cream
1/3 cup buttermilk
1 tsp granulated garlic (or powder)
1 tsp granulated onion (or powder)
1/2 tsp white pepper
2 tsp chopped parsley
1/2 tsp salt
combine well, refrigerate for at least two hours

Fry Sauce:
1 cup Hellmans Mayo
2/3 cup ketchup
1/2 tsp salt
1/8 tsp paprika
1/4 tsp ground mustard
1/2 tsp granulated onion
3 tbsp red wine vinegar
1 1/2 tsp Worcestershire sauce
*Optional: add all of the adobo sauce from a can of chipotles
whisk, refrigerate for at least two hours.

Wings:
1 family pack of fresh wings, disjointed
prepare a large sheet pan with tin foil, and a rack, and spray well with cooking spray.
Dry wings off with paper towels, and lay them in a single layer on the rack.
Preheat oven to 475 F (YES, THERE WILL BE SMOKE...I cover my smoke detector with plastic cooking film before hand)
Dry wings off one more time, and bake for 30 mins, turn, continue to roast until wings are golden brown approximately 20-30 more minutes.

Wing sauce:
2/3 cup Franks Red Hot
1 tbsp salted butter
combine in small sauce pan over medium heat...do not simmer.

Hand Cut Fries:
Cut potatoes into slabs, then into slightly thick fries. Soak in cold water until ready to use. Fill large pot with 1.5-2 quarts oil (I use peanut), not more than half full. Shake excess water from fries and submerge in COLD oil (I know, sounds crazy, but works like a charm...trust me on this one), and turn burner to HIGH. Do not agitate fries for the first 15-20 minutes. Cook on high until golden brown, about 25-30 minutes for a full batch. *NOTE: if your stove has a "power" burner...do not use it, use a regular burner.* Season with seasoned salt and chopped parsley.

I like my wings well done, or fried hard as they say up in the city, will this method allow for that level of crispyness?
Yes....Give them an extra five minutes on the first side...and that should get you in the ball park at the end. This recipe will let you finish the wings any way you like...just let them keep going if they're not done to your likeness. There is a point that they will dry out a bit....but its farther than you think.

I also love the double fried french fries....that is the classical way of doing it. This will get you close, but is a stoner method. Starting them in cold oil acts as the blanch in this technique...which is why you leave them alone for the first 15-20 minutes. They're very soft at that point.

You can add as much or little butter as you like...it cools them down a bit if you add more. The important thing is to add some level of butter...otherwise without the fat, the sauce will have a tough time adhering to the wings.

Hi.

Anybody still alive? It's been like a nice meadow in the summer over here on the food thread...lol Crickets are chirping loud and clear. It's actually been hectic around here...so there has been nothing super noteworthy for the thread. I did make some panko breaded chicken clubs with bacon and swiss on big toasted brioche buns a few days ago, but I dint pic a grabture.

I think y'all have seen it before....a 6" tall sammich from me that looks like it will put up a good fight. I had a nice yellow heirloom tomato to go with it. The hardest thing with those is to keep em from sliding...big lettuce and surfing tomaters like to travel laterally. Ya gotta fight back and square it up...then step on it with your teeth.

I got some exciting news...well maybe not for you, but I'm bouncing off the walls. My favorite all time band, Dream Theater is coming to Syracuse on November 9th and I grabbed a pair of tickets tonight. I have seen em 14 times now in the last 25 years I have been following em. It's the 20 year anniversary of Metropolis Pt 2: Scenes From a Memory...which is a flowing concept record about a modern guy named Nicholas that is having regression therapy under hypnosis. He dreams about the murder of this girl named Victoria in 1928, only to realize that she is him from a past life...a murder that was never truly solved, and he feels that she is haunting him to get to the truth.

It's a fucking brilliant record and it stands right next to Dark Side of the Moon as one of the best conceptual albums ever made. They are playing it in its entirety, and I got killer seats in a fairly small venue. I've listened to this record at least 250 times throughout my life and I hear new things every time I listen to it.

I HIGHLY encourage you to give it a go, it's a roller coaster and a tear jerker. Like I said before....I got their logo tattooed on my forearm, and that's the only band tattoo I've got. Its hard to even put into words how I feel about their music. Especially being a guitar player, if you like Floyd and Rush, and like good guitar oriented music, you will love this record...okay, I'm done about that. Carry on.

In other news this fucking idiot (me) pulled a Greeny and killed his sourdough starter. Yeah. I did it. No more bread for a minute. I need to make some cookies or another pie for Bushy's thread. That thread is like sourdough 101 for anyone interested though...lol

Got me a delish RB samich with the works, even shredded carrots!! Provolone cheeze mayo salt and pepper. I am a big Floyd fan but my buddy is obsessed LOL he owns everything that’s ever been put out by Floyd,Waters and Gilmore. I just picked up 2112 by Rush on 180 gram, sounds amazing. To be honest I don’t think I’ve ever heard this band but I will definitely give it a spin.

Love the USB. I am completely obsessed with guitar. Like HUGE. The music industry has gone through some serious changes (and not for the better) in the last 20 years. iTunes destroying albums, over produced songs, auto-tuned vocals, time aligned instruments, drum samples and other computer fuckery. The human element and human performance is gone. Combine that with perfect time aligned drum samples (using drum triggers to signal a drum hit, which then plays back a recording of a single drum hit....that somebody else did....then aligning it all to a fucking grid). By the end of this, what your hearing is someone else's drum hits, and a computers perfect timing. This is one of key things that is making music all sound the same these days. Along with the fact that the recording budget is dead now...it's a recipe for disaster. Fortunately, there are still a few bands that actually have a loyal enough following...Dream Theater being one of em...that they can still make albums. Most music now is in single serve form. To best explain DT, they are one of the most talented bands to ever walk the planet. The atmosphere and vibe they give off is nuts. It's a cross between Floyd, Rush, Justice era Metallica, Queen, Tool, and Queensryche. The epicness of Floyd, the proggyness of Rush, the crunch tones of old Metallica, the operatic nature of Queen and the odd time feel of Tool with some Queensryche prog guitars. That's Dream Theater.

The Scenes record I linked is more on the Queen and Floyd end...the guitar tones are ridiculous and John Petrucci is one of the best guitar players on the planet. These guys even cover whole albums by other bands...like Master of Puppets, Dark Side, Number of the Beast by Maiden. They are a 5 piece with 1 guitar and 1 keyboard, so they are very set up for the Floyd sound already. It's just a phenomenal band, and this record has been a fan favorite. I spent $160 on a pair of tickets last night. These guys give you your money's worth...they play 3 hour live shows with no opening act. It's truly an experience. And their live show is fucking incredible, they are like a machine. They have made 14 full studio albums since they started in the late 80s, and their songs don't always follow the standard song structure. Some are 20 mins long, but I would say the average is about 8 mins. You just gotta check em out, there isn't another band on the planet that does what they do, and they are cited as the fathers of modern progressive music. They are Berklee College of Music alumni...the music is lead by guitar and Petrucci will show you why he is the man...all the time. Being a 27 year guitar player who is obsessed with electric guitar tone and technique, I have been studying his playing under a microscope for the last 20 years. He has this incredible ability to ALWAYS play the perfect part. Do check em out...lemme know what ya think. Here is some other choice listening single songs from them:
