I've also heard it called manifolding. Basically just a combo of topping and training to try and get an even number of main colas going, and if done really right they'll all be roughly the same distance up the stalk from the ground as each other. The end goal being to get an even distribution of light and nutrients to each of the colas. The theory is that if they are all have an equal amount of stalk between them and the roots, it takes the same effort for the plant to get nutrients to all the sites and you get consistent buds around the plant.
I didn't get the training as well as I maybe could have, but you can hopefully get the idea from the pic of the Deep Cheese after chop (makes it ridiculously easy to chop, BTW...eight nice even branches...snip snip snip)
