Ohhh yeah... Skin and clean your groundhog, debone it, and throw it in a slow cooker with veggie broth, red potatoes, carrots, celery, and onion...and about 1/8 cup black pepper... You'll thank me.
I have had both silver gray squirrels and pine squirrels justice that and it was certainly delicious. A bit of work, but very well worth it, I could imagine groundhog being quite similar!
