I made these three-ingredient peanut butter cookies over the weekend for the first time since the holidays. I've made similar versions for a year or so now, and the version I linked above is the best I've found overall. I go with crunchy peanut butter & add 1/2 cup butterscotch chips to what they list...had to share. Super easy and ridiculously good.
