Live Stoners AFN Baking (breads n things)

Yay....I could hardly contain myself while the site was mucked up. So I became Betty Crocker overnight and whipped this fucker up.

227g starter
255g water
454g bread flour
7g oil
7g sugar

Combine and let rest for 20m to do the autolyse

11g sea salt and knead well

Let rest on counter for 4-5 hours with a 4x fold every hour. Basically north south east and west.

Bag it up and refrigerate for 12 hours.

Shape dough (follow King Arthur shaping video)

Place an impregnated towel into your form (metal bowl, basket, brotform) and flip shaped dough into the form

Let rest on counter for 1.5hours

Preheat oven to 450° and put a Dutch oven with lid or a pizza stone and roasting pan lid in to heat with oven

Flip dough into parchment and score with a lame. I used a barber's razor.

Place parchment with dough into Dutch oven or pizza stone and cover with lid and slide into oven

20m and remove lid

15-20 more minutes uncovered

I remember reading Mike's post a month ago...good ole number 7. I was intrigued to say the least. Here we are today...lol.

It's quite amazing what the internet is capable of beyond Fakebook. Most of the youngins I know can't stop taking selfies, especially the girls...if only they had a clue how to even turn the oven on. Hopefully the knowledge here will remain so the 10% who carry the torch in the kitchen can keep it shining bright.

These "modern" idiots started in my generation and they don't pass anything on...because there isn't anything there.

It might be a good time to invest in McDonalds and Taco Bell.

I don't do any other forms of social media besides AFN!! Thanks to you guys I'm obsessed with growing dope and now starting to get slightly obsessed with food!! I think I might be nearly the last person on earth to have never taken a selfie :rofl:.

We picked up a Pizza dough roller yesterday used for $150. It took me 8 or more hours to clean it up and I am replacing the on and off buttons. The rubber cover membranes are worn out. Other wise it is complete and functional. This thing sells new for $4,200.00 so it is a fantastic find for a cheap guy like me :woody:.

I have some good friends that like my medicated chocolate and come by regularly to keep stocked up. I have known them for years but just found out that they almost never cook a meal at home, twice in the past year? They are both professionals and they work wacky hours but really..............

I am glad my wife and I are in the 10% with the cooks here on AFN.

I'm old enough to have been online before there was an "internet" as it was known in the 90's.

Back in the old days, we had BBS phone numbers to dial on our brand new 2400 baud modems. From there came FIDO net, arguably the first version of global email that worked like modern email works.

Even back then, the community was amazing (We even actually [[gasp!!!]] met in person often). Today it's a bit more challenging to grow groups in the same way - the internet being the size that it is - but its not impossible.
