Ph drift most likely due to what the soil has been made up with and what your plant is taking in. Most well built soils you won't see an issue with, as it kinda holds it's own as far as pH goes.
The pH up I use is called Olympus up. It is a liquefied limestone, gets in and really sticks in the soil.

Two plants is perfect for that size if you are using 5 gallon pots. That american pie was a beast and was three times the size of the other plant so it also depends on the pheno and how big they get.
I am now growing in two 3 gallon pots and one more in a wellie.
