Don't enchiladas have red or green sauce instead of sausage gravy? Looks more quiche to me

Ive seen some pretty light green sauces that look like that.

Ive seen some pretty light green sauces that look like that.

Enchiladas can have verde sauce (green), enchilada sauce, ranchero sauce, queso… and more i am forgetting! Chicken enchiladas tend to come with a sour cream sauce tho! U could see it on top under the cheese and it had enough baked inside it i didn’t add any on top just a smidge of sour cream! If it was beef enchiladas with a red sauce mine woulda looked totally white from all the sour cream i would loaded on top!
